If it didn't improve health why have millions of people have kept drinking it and brewing it, for over two thousand years. What is KombuchaKombucha is a invigorating tea-based beverage that millions drink for its health benefits or medicinal reasons. There is scientific data supporting health benefits but unfortunately few studies or have been conducted mainly due to the expense of such studies. There are several centuries of popular accounts supporting health benefits attributed to the tea. Kombucha is available in stores but can easily be prepared by fermenting tea using a solid mass of yeast and bacteria often nicknamed a SCOBY. This produces the kombucha culture which is also often popularly referred to as the "mushroom" although it is not a true mushroom. It slowly grows on the surface of the tea during the period of time the tea is fermenting and looks like a whitish colored pancake.
