About Kombucha


Kombucha is a carbonated tea-based beverage that millions drink for its health benefits or medicinal reasons. There is scientific data supporting health benefits but unfortunately few studies are being conducted mainly due to the expense of such studies. There are several centuries of anecdotal accounts telling of health benefits attributed to the tea. Kombucha is available commercially but can easily be made at home by fermenting tea using a solid mass of yeast and bacteria often nicknamed a SCOBY. This forms the kombucha culture which is also most commonly referred to as the "mushroom" although it is not a true mushroom. It slowly grows on the surface of the fermenting tea during the period of time the tea is fermenting and looks like a whitish colored pancake.

Kombucha Tea is not a drug. The F.D.A. has found Kombucha Tea to be a safe drink if it is correctly prepared in a clean manner so as not to be contaminated by pathogens. Any food that you prepare has a risk of contamination but the risk is probably less so for Kombucha because it is a fermented drink which as it ferments it creates a small amount of alcohol which helps to protect the tea against pathogens.
