If it didn't improve health why have millions of people keep drinking it and brewing it, for over 2000 years. Description of KombuchaKombucha is a carbonated tea-based beverage that is often drunk for its health benefits or medicinal reasons. There is scientific data supporting health benefits but unfortunately few studies or have been conducted mainly due to the expense of such medical studies. There are several centuries of anecdotal accounts supporting health benefits attributed to the tea. Kombucha is available commercially but can easily be made at home by fermenting tea using a solid mass of yeast and bacteria often nicknamed a SCOBY. This forms the kombucha culture which is also referred to as the "mushroom" but it is not really a mushroom. It slowly forms on the surface of the fermenting tea during the period of time the tea is fermenting and resembles a near whitish colored pancake.
