If it didn't improve health why have millions of people keep drinking it and making it, for over 2000 years. What is KombuchaKombucha is a effervescent tea-based drink that millions drink for its health benefits or medicinal reasons. There is scientific data supporting health benefits but unfortunately few studies are being conducted mainly due to the expense of such studies. There are several centuries of anecdotal accounts supporting health benefits attributed to the tea. Kombucha is available in stores but can easily be prepared by fermenting tea using a spongy mass of yeast and bacteria often nicknamed a SCOBY. This forms the kombucha culture which is also most commonly referred to as the "mushroom" although it is not really a mushroom. It slowly grows on the very surface of the tea during the period of time the tea is fermenting and looks like a whitish colored pancake.
