If it did not help to improve health why have millions of people have kept drinking it and making it, for over two thousand years. Description of KombuchaKombucha is a carbonated tea-based drink that is often drunk for its health benefits or medicinal reasons. There is scientific information supporting health benefits but unfortunately few studies are being conducted mainly due to the cost of such studies. There are several centuries of anecdotal accounts supporting health benefits attributed to the tea. Kombucha is available in stores but can easily be made at home by fermenting tea using a solid mass of yeast and bacteria often nicknamed a SCOBY. This forms the kombucha culture which is also referred to as the "mushroom" but it is not a true mushroom. It slowly forms on the very surface of the tea while the tea is fermenting and looks like a near whitish colored pancake. Testimonial (Just one of many): Testimonial - Diabetes: "I am a middled aged Type I insulin dependent diabetic, female. I first learned of kombucha tea through my sister who is an RN. I tried it. I was absolutely astounded to see that my need for insulin dropped considerably almost immediately, like the next day. And as long as I stayed on the tea, my body needed to be injected with less insulin. For those of you who don't know, the less insulin you have to inject, the healthier your body is. This past weekend I had company. We took an out-of-town train tour of my state. I didn't drink kombucha tea. What happened? Blood sugar levels went up! I got right back on kombucha tea and am now back on low need for insulin. This is for me something to shout about... M.B."
