If it did not help to improve health why have millions of people keep drinking it and preparing it, for over 2000 years. Description of KombuchaKombucha is a effervescent tea-based beverage that millions drink for its health benefits or medicinal reasons. There is scientific info supporting health benefits but unfortunately few studies are being conducted mainly due to the expense of such medical studies. There are several centuries of anecdotal accounts supporting health benefits attributed to the tea. Kombucha is available in stores but can easily be prepared by fermenting tea using a spongy mass of yeast and bacteria often nicknamed a SCOBY. This produces the kombucha culture which is also referred to as the "mushroom" although it is not really a mushroom. It slowly forms on the surface of the fermenting tea during the period of time the tea is fermenting and resembles a whitish colored pancake.
