If it did not help to improve health why have millions of people keep drinking it and brewing it, for over 2000 years. About KombuchaKombucha is a carbonated tea-based drink that is often drunk for its health benefits or medicinal reasons. There is scientific information supporting health benefits but unfortunately few studies or have been conducted mainly due to the expense of such medical studies. There are many centuries of popular stories telling of health benefits attributed to the tea. Kombucha is available in stores but can easily be prepared by fermenting tea using a spongy mass of yeast and bacteria often nicknamed a SCOBY. This forms the kombucha culture which is also referred to as the "mushroom" although it is not really a mushroom. It grows on the surface of the fermenting tea during the period of time the tea is fermenting and looks like a near whitish colored pancake. I have noticed many people whose comments indicate that they drink 16-24 ounces per day. I have been drinking about 6-8 ounces per day with great results.
