If it did not better health why would millions of people keep drinking it and brewing it, for over 2000 years. Description of KombuchaKombucha is a carbonated tea-based beverage that millions drink for its health benefits or medicinal reasons. There is scientific info supporting health benefits but unfortunately few studies are being conducted mainly due to the cost of such medical studies. There are several centuries of anecdotal stories supporting health benefits attributed to the tea. Kombucha is sold commercially but can easily be prepared by fermenting tea using a spongy mass of yeast and bacteria often nicknamed a SCOBY. This forms the kombucha culture which is also often popularly referred to as the "mushroom" although it is not a true mushroom. It grows on the very surface of the tea while the tea is fermenting and looks like a whitish colored pancake.
